How to Make It
- Bring 6 cups broth to a boil in a 3–4 quart pot, then reduce heat and stir in the soup mix and potatoes.
- Simmer covered for 30 minutes.
- Gently mash the potatoes with a fork or spoon.
- Stir in 1 cup cream, season with salt and pepper, and remove the bay leaf.
- Cover and cook 5 minutes, then serve.
