How to Make It

1. Pick through the beans, removing any discolored or shriveled beans and foreign material, then rinse well.
2. Place the beans in a pot, add broth and water, boil 10 minutes, then reduce heat, cover, and simmer 1½ hours until tender.
3. Slice the sausage lengthwise then crosswise into half circles; add to the pot with the vegetable packet, boil, reduce heat, and simmer covered 30 minutes.
4. Add the diced apples, return to a simmer, and cover 5 minutes.
5. Stir in fresh spinach for 1 minute, then serve.
