Rocky Mountain Trail Loaded Potato Soup

Perfectly seasoned potatoes and herbs create a creamy, velvety bowl that tastes just like your favorite comfort food. Just add fresh potatoes, bacon, and cream to this pantry-friendly mix for a homemade bowl in one pot.

How to Make It

1. Slice uncooked bacon into half-inch pieces and place in the bottom of a 4-quart pot.
2. Over medium heat, saute the bacon until browned and crispy, 8 to 12 minutes.
3. Remove the bacon, set aside on a paper towel, and discard excess bacon grease.
4. Peel and cube the potatoes. Add cubed potatoes to the pot, stir into the residual bacon grease, add chicken broth, and bring to a boil.
5. Stir in soup mix. Return to a simmer, cover, and cook for 30 minutes.
6. Stir in heavy cream and heat uncovered on low for 5 minutes.
7. Top each serving with the crumbled bacon.
8. Add shredded cheese and/or sour cream, if desired.
