How to Make It
- Heat 2 Tbsp. oil in a 4-quart pot over medium-high heat.
- Sauté chicken thighs 4–5 minutes per side; set aside to cool.
- Stir in the soup mix and 4 cups chicken broth; bring to a boil.
- Dice the cooled chicken, add to the pot, reduce heat, and simmer covered 15 minutes.
- Stir in 2 cans (27–28 oz. total) unsweetened coconut milk; simmer 10 minutes.
- Optional: finish with a squeeze of lime.
