Our Ohio Valley Vegetable Soup starts with a carefully layered blend of dried carrots, corn, bell peppers, and tomatoes, all packed into a convenient dry mix for easy pantry storage. Add chopped onion at the start and stir in peas at the finish for a colorful, flavorful soup any time of year.

How to Make It

1. In a 4-quart pot, saute chopped onion in oil over low heat for 5 minutes.
2. Add the contents of the vegetable soup mix and toss lightly.
3. Add broth and stir. Add cut-up chicken or turkey, if desired.
4. Bring to a boil. Reduce heat and simmer covered for 15 minutes, stirring occasionally.
5. Stir in the contents of the pasta packet and return to a simmer, covered, for 20 minutes.
6. Add peas and lemon juice, continue to simmer for 2 to 3 minutes uncovered, and serve.
