Louisiana Backyard Cajun Gumbo

How to Make It

1. Slice sausage lengthwise, then crosswise into 1/4-inch half circles. Heat oil over medium-high and sauté the sausage 5–10 minutes until browned; remove. Add chicken thighs, sauté 4–5 minutes per side, remove, and reduce heat to medium-low.
2. Add butter and flour to the pot. Deglaze with a wooden spoon and stir continuously 10–12 minutes until light brown (peanut-butter color), or up to 25 minutes for a darker roux.
3. Add the vegetable and seasoning packet and stir 30 seconds. Add 1 cup broth and mix, then add the remaining broth and increase heat to medium-high. Shred the chicken and add it with the sausage. Bring to a boil, reduce to a simmer, cover, and cook 30 minutes over low heat.
4. Meanwhile, cook rice in a separate pot with 3 cups water for 15 minutes; fluff with a fork.
5. Serve 3/4 cup rice per bowl topped with about 1 1/2 cups gumbo.
