How to Make It
- Heat 1 Tbsp oil over medium heat in a 4-quart pot.
- Brown 1 lb sausage (removed from casing), breaking up any clumps.
- Stir in the stew mix, then add 4 cups chicken broth, 1 can diced tomatoes, and 1½ cups cooked chicken.
- Bring to a boil, reduce heat to a simmer, cover, and cook for 30 minutes.
- Serve with tortilla chips or cornbread.
