A carefully balanced mix of herbs and spices keeps it light yet satisfying — just sauté fresh cauliflower, add broth and cream, and blend into a silky homemade soup in about 45 minutes.
What's Inside
- Navy bean, carrot, onion, celery, fennel, cauliflower, garlic, scallion, ground peppercorn blend (black, green and white peppercorn), allspice
How to Make It
- Melt butter or heat olive oil over medium-high heat in a 4-quart pot.
- Add cauliflower and sauté about 5 minutes until lightly browned.
- Stir in the soup mix contents, add broth, bring to a boil, cover and simmer 25 minutes.
- Add heavy cream and puree with an immersion blender to your desired consistency.
- Season with salt and pepper as desired.
- Serve with toasted pita bread and garnish.
